This is a short and simple shortbread cookie recipe. The cookies are sweet and buttery, satiating that sweet tooth craving without wrecking your attempts to reduce sugar in the migraine trigger avoidance diet. With only four ingredients, this recipe is quick and delicious!

Ingredients
  1. 2 Sticks Butter
  2. 1/2 Cup Sugar
  3. 2-1/3 Cups Flour (Gluten Free)
  4. 1/4 tsp. Salt
Instructions
  1. Preheat the oven to 300 degrees Fahrenheit
  2. In a large bowl, cream butter and add in sugar
  3. Beat until the mixture becomes light and fluffy
  4. Work in gluten free flour and salt until the dough becomes crumbly
  5. Press dough evenly into a greased 9-inch baking pan
  6. Prick the surface of the dough all over with fork to ensure it bakes all the way through from the surface to the bottom
  7. Bake for 50-60 minutes, until the surface has turned light brown
  8. Once the mega cookie is cooked and cooled, cut into 1-inch by 1-inch serving squares
  9. Enjoy!
Notes
  1. After the cookies are cooled and cut, we put at least half into the freezer to save for later!
